I found a recipe for Courgette and Chickpea falafel, so I'm going to try it with Lamb steaks baked in Apricot and Almond.
First the Falafel,
2 Tins Chickpeas, 3Tblsp Plain Flour, 2tsp Harissa, 1tsp Corriander ( you could use chopped fresh, I forgot to get it) some garlic paste and lemon juice.
Blend together and grate the courgette
Mix into a rough paste.
flour your hands and form into balls,
These will be fried later.
Next oil a dish and add dried apricots, almonds, and mixed fruit. mix to coat all the bits with the oil.
Put Lamb streaks on top and paint with Tagine Paste.
cover with foil.
Heat the oven to 180°C and bake the Lamb for 40 minutes, meanwhile, fry the falafel until crisp on both sides.
Maybe not perfect shapes but I'm sure the taste will be fine.
