Lamb and Falafel

I found a recipe for Courgette and Chickpea Falafel, so I'm going to try it with Lamb steaks baked in Apricot and Almond.

First, the Falafel, 




You will need, 2 Tins Chickpeas, 3 Tblsp Plain Flour, 2 tsp Harissa, 1 tsp Coriander ( you could use chopped fresh, I forgot to get it), some garlic paste and lemon juice.

Blend these together,



grate the courgette, making sure to wring as much liquid from it as you can,


Mix into a rough paste.



flour your hands and form into balls,




These will be fried later.

Next oil a dish and add dried apricots, almonds, and mixed fruit. mix to coat all the bits with the oil.



Put Lamb streaks on top and paint with your favourite Tagine Paste. I use this one,






cover with foil.

Heat the oven to 180°C and bake the Lamb for 40 minutes, meanwhile, fry the Falafel until crisp on both sides.




Maybe not perfect shapes but I'm sure the taste will be fine.




The lamb is done,




Perfection.

  2. This recipe looks brilliant! Not too keen on lamb though so I may attempt a vegetarian version. Love the garden photo. Is it yours?

  3. The fruit caramelises, it was the best bit. Make sure you wring as much moisture out of the courgette as you can. A veggie version sounds great, my daughter would love that! And yes, it is my garden, Yvonne is the gardener and a fantastic one too!
