Pasta and Roasted Veg

So I've got the home-made pasta,



I've got the veg, first mushrooms, onions and tomatoes, in oil and Balsamic,


I let them cook for an hour in a 160 degree oven, covered, then added Aubergine, Courgette and Peppers for 30 minutes.



Meanwhile I buttered bread that had garlic on spread on it and put it in the oven for the last 20 minutes.



Then warmed my sauce and boiled the pasta for 4 minutes.

Put it all together.




A bit of grated cheese on top, it was rather tasty with a glass of Rose Petal wine, 2013 vintage.
